This salmon chowder recipe has a Thai-inspired twist. From food blog Not Without Salt, the Thai-Style Salmon Chowder contains delicious and healthy ingredients such as shiitake mushrooms, ginger, garlic, tomato, red peppers, lemon grass, kaffir lime leaves, coconut milk, salmon, chicken stock, fish sauce and lime juice. The dish is also served with cilantro, lime and crispy salmon skin.
Even though this soup only takes about half an hour to make, it tastes like it's been simmering on the stove all day long. Described as "bright, tart and fresh -- but with salmon," the chowder combines comfort food with exotic and foreign flavors. Definitely rich, the soup has a lot of complexity. You can enjoy it for leftovers, but be careful not to overcook the salmon.
