In the style of most food and drink items served at a fair, The Pig and The Potato created an over-the-top pork dish for the New York State Fair.
From afar, the parfaits served at this fair seemed to be quite ordinary, with alternating layers of crunchy granola layer and creamy white yogurt. However, going up to The Pig and The Potato's booth would quickly reveal that what it was serving was in fact a Pulled Pork BBQ parfait. Rather than channeling sweet flavors, this pork dish featured smoky pulled pork and mashed potatoes.
While these items would ordinarily be staples of a hearty dinner meal that demand to be eaten with a fork and knife, serving them in a cup makes the pork dish portable in a shareable snack-sized portion that can be eaten with just a spoon.
