The Startup 'PoLoPo' is Putting Egg Proteins Inside Potatoes

'PoLoPo' is an Israel-based startup creating synthetic animal proteins without harming animals. The company uses a proprietary technology to grow egg white-like animal proteins inside of potato tubers, offering a sustainable, cruelty-free way to obtain animal proteins. In addition to offering sustainable proteins, these egg-infused potatoes also offer other health benefits, such as essential amino acids and some vitamins.

The company creates its synthetic proteins using Ovalbumin, the protein inside of egg whites, meaning its products will taste nearly identical to real egg whites, all while being vegan-friendly.

PoLoPo has raised $1.75 million USD in a recent round of funding to accelerate the development of these egg white-infused potato proteins, which was led by companies such as FoodLabs.
