The rise of plant-based desserts has gained momentum as innovative alternatives on the market now rival the performance of traditional butter and dairy, and Auguste Escoffier School of Culinary Arts debuted a new standalone plant-based pastry course. Foundations of Plant-Based Pastry 1 is a six-week course for students who want to explore the fundamentals of making plant-based pastries and working with plant-based ingredients.
As part of the course led by Escoffier pastry arts chef instructor and plant-based baking professional Sarah Jardine, students will learn basic pastry techniques, the science of ingredient interactions and how to balance flavors and textures.
In 2021, Escoffier launched its first-ever Plant-based Culinary Arts Degree and Diploma programs. This new source focuses on desserts and pastry items like cookies, pastries, pies, tarts and puddings.
