The spherical ice cubes are actually chilled in small water balloons. Choose food coloring of your choice to add a couple drops to color the ice cubes. The full pictorial and further instructions are posted on the Subtle Revelry blog.
The colorful ice balls are pretty by themselves or stacked in a tall glass. The only thing I would be skeptical about is the food dye melting and infusing with the color of the drink. It takes a bit of color mixing to figure out a solution that won't turn your drink black.
