This Grain-Free Spicy Noodle Dish is Made with a Spaghetti Squash
Pad thai is a popular Asian meal that features both spicy, sweet and savory flavors wrapped into one with a delicious sauce, crunchy peanuts and lime juice. This healthy version of the popular dish cleverly substitutes the rice noodle base for spaghetti squash.
Veggies can easily be used as substitutes for popular grain foods like pastas and noodles. Spaghetti squashes in particular are ideal for subbing into Asian cuisine because the thin angel-like hairs of the squash are similar to vermicelli noodles. Once the squash is cooked the hairs can be pulled out using a fork to create faux noodles.
