With Turkey day on its way, why not cook up a batch of these oatmeal pumpkin sandwich cookies to add some cute flair to your Thanksgiving dessert menu?
These goodies use two mini oatmeal cookies with a spicy pumpkin frosting sandwiched between them. The idea for the recipe was inspired by the Little Debbie cookies that have the cream filling inside. The trick is to mix up your batter for the oatmeal cookies and throw a bit of cranberries in them, then mould them into little balls and pop them into the oven. When you take them out, let them cool for just a bit otherwise the icing will run all over your treats.
These festive Thanksgiving oatmeal pumpkin sandwich cookies will have your guests filling up on sweets before the meal so you better keep them locked away in the kitchen until the time is right.
