Developed by NYC pastry chef Jen Yee, the Coconut Matcha Smoothie is one of the many beverage confections Yee makes for the Lafayette Grande Café and Bakery. Utilizing the main ingredient found in green tea, Yee makes this drink with 2 tablespoons of matcha powder as well as agave nectar, coconut milk and ice. With the use of coconut milk opposed to cow's milk, this smoothie is also vegan-friendly unlike usual green smoothies.
