With Autumn finally here this festive fall salad is an ideal meal to enjoy during the cooler weather that is filled with bright colors, fresh produced and hearty ingredients. The salad is designed to be eaten warm making it the perfect pick-me-up meal when the weather isn't so great. The dish is also filled with a ton of nutritious ingredients from quinoa to chopped nuts making it incredibly healthy and filling.
This sweet toasted salad begins with a caramelized butternut squash that is roasted and cubed. The squash is tossed in with quinoa for added energy and combined with arugula, cucumber, avocado, dried cranberries, red onion and goat cheese. For extra protein a handful of nuts are added including pistachios and sunflower seeds. The salad is then finished with a simple dressing made with balsamic vinegar and olive oil.
