While some people might maintain that you can't eat ice cream in the winter, these eggnog and gingerbread cookie ice cream sandwiches prove otherwise. Created by Laura at Blogging Over Thyme, the recipe takes classic Christmas flavors and turns them into a frozen treat.
The eggnog and gingerbread dessert is made with homemade eggnog ice cream sandwiched between two chewy gingerbread cookies. The holiday beverage-inspired ice cream is made with egg yolks, granulated sugar, whole milk, heavy cream, freshly grated nutmeg, brandy and finely chopped crystallized ginger. You can use store-bought gingerbread cookies, use your own favorite recipe or go with the one Laura included.
The result is a festive ice cream sandwich that makes the season cooler than cool.
