Drive-in tasting menus have become commonplace in the context of the COVID-19 pandemic—so much so that even the brands that fancy themselves to deliver the most luxurious of experiences are adapting to more convenient models of business. St. Louis fine dining restaurant Bulrush, which offers historic Ozark cuisine, is part of this movement. Back in August, the business launched its 'Park & Dine' drive-in tasting menu program—from "confit turkey thigh over hominy" to "forage pawpaw on top of grits with foraged black mushrooms."
Through this initiative, Bulrush prioritizes the safety of customers and staff. The menu, which costs $100 per person, remains much unchanged from the restaurant's pre-COVID times. Workers can identify which car needs service—whether to clear dishes or bring the next course—through a special colored flag system.
Bulrush enhances the drive-in tasting experience by giving customers a link to its Spotify list and a live Zoom call where they can indulge in the sights and sounds of the kitchen, as well as ask questions if they have any.
