Bestzyme is scaling commercial-scale sweet proteins with a dedicated automated production line for Mellia Brazzein at its Jinan facility. The 5,000-square-meter facility integrates fermentation, purification and freeze-drying, addressing manufacturing challenges that previously limited Brazzein largely to laboratory-scale production. Once operational, the line will produce more than 100 tons annually, equivalent to the sweetness of approximately 300,000 tons of sucrose. The zero-calorie protein can also be blended with sweeteners such as stevia and monk fruit to create fuller sweetness without affecting blood sugar.
For Bestzyme, owning the process from research through manufacturing and application provides greater control over supply, quality and production speed. Commercial-scale output also makes Brazzein more accessible to food and beverage manufacturers developing reduced-sugar products. With U.S. GRAS status already established, the facility positions Bestzyme to serve growing global demand for scalable sugar alternatives.
