Unconventional in color, this plate of Zucchini-Glazed Spaghetti features a green hue very unlike the usual Italian dish. This recipe utilizes the green vegetable for a glossy glaze atop spaghetti noodles.

Created by Italian food lover Francine Segan, this recipe is a pasta twist out of her latest cookbook 'Pasta Modern: New and Inspired Recipes From Italy.' Using a cheese grater, the easy dish requires the consumer to grate the zucchini into a green juice, which the pasta is then cooked in. With the crisp zucchini leftovers, the consumer can toss them in for the perfect finishing touch on this contemporary pasta dish. It is suggested that this dish be made with Felicetti Monograno farro spaghetti, but that option is completely up to the cook.
