SHŌ is expanding its beverage pairings with an eight-drink, spirit-free menu designed for 'Shōjin,' its plant-based omakase. Built by Bar Director Pepe Pereyra to complement Executive Chef Mari Katsumura's vegan courses, it offers diners a full pairing that follows the pacing of wine service instead of a standalone mocktail format.
Pereyra builds the pours around Oddbird nonalcoholic wines, which are vinified before vacuum distillation removes the alcohol. Guests receive them in wine glasses without ice, with a bright Grenache-Syrah-Mourvèdre match for the canapés and a Tempranillo pour with red cabbage shrub and yuzu for the hot somen.
An eight-drink zero-proof format turns nonalcoholic service into a structured tasting upsell instead of a single fallback for diners skipping alcohol. Building it from wine with the alcohol removed and kitchen ingredients widens how restaurants can approach vegan pairings, giving the category a closer substitute for classic wine service.
