This simple and traditional watermelon pudding recipe was created by Italian local Emiko Davies. The fresh summer treat will inspire you to cook all kinds of fruity dishes.
To make this tasty treat, start by turning four cups of diced watermelon into juice by blending it up. Mix half a cup of the juice with two thirds of a cup of cornstarch and stir before adding the rest of the melon juice into a saucepan. Simmer this and add half a cup of sugar for sweetness. Cook the mixture for ten minutes as it thickens and then pour it into single serve containers and refrigerate for six hours.
You can top each watermelon pudding with a simple garnish like chopped chocolate or pistachios.
