The 'I Heart Vegetables' blog has produced a recipe for vegetarian meatballs that is both easy to make and delicious. Packed with fresh herbs and raw nuts, these hearty meatballs will make you forget that they don't contain any meat at all.
To make the vegetarian meatballs, you will need olive oil, white onion, garlic, raw walnuts, brown rice, basil, oregano and flour. To begin, cook the onion and garlic until the onion begins to soften. Then combine the walnuts, cooked rice, flour and spices in a high-speed food processor. Add the onion and garlic to the food processor and pulse until combined. Form the mixture into tight balls and then cook until firm and browned. These healthy meatballs are best enjoyed swimming in marinara sauce or on top of your favorite pasta.
