This skillet gnocchi is a delicious summer time weekday meal that is the perfect use for any leftover grilled corn you might have from last weekend's barbecue. Made by Jessica Merchant from the food blog How Sweet It Is, the Summer Skillet Gnocchi is described as "a summer hug in a bowl." The seasonal comfort food won't heat up the whole house and doesn't take a lot of time to make either.
The recipe can easily be changed as the seasons change. This version consists of yummy ingredients including sweet onion, garlic, shittake mushrooms, freshly grated parmagiano-reggiano cheese, grilled corn, mini gnocchi, fresh basil and oregano. The creamy pasta dish is still light and a healthy vegetarian option.
