This recipe transforms the dessert into a filling custard that is made using blended cashews, pumpkin puree, spices, almond milk, maple syrup and coconut oil. This creates a pumpkin pudding that is then layered into a parfait using coconut whipped cream. The whipped cream is also dairy-free and is made using a can coconut milk blended with powdered sugar.
