Developed within the kitchen of L.A. restaurant 'Pink Taco,' this meatless Mexican dish appeals to all audiences. Where the traditional taco provides a layer of seasoned ground beef, this taco dish replaces it with grilled portobello mushrooms. Pink Taco chef Sam Anguiano explains that the mushrooms are grilled all the way through to create different layers of texture. The Portobello Mushroom Tacos are delicately wrapped in four-inch corn tortillas and topped with the usual taco toppings in addition to caramelized onions.
