Posted on the Tasty Yummies blog, this muffin recipe is inspired by Annelies Zijderveld's latest cookbook 'Steeped, Recipes Infused With Tea.' The recipe is made with blanched almond flour, earl grey tea and other usual ingredients. Tasty Yummies' Beth was able to create 24 tea-infused mini muffins. Since these are smaller than the conventional muffin, this grain-free recipe also makes a convenient portable snack. Although "earl grey" is in the title, cooks can substitute the tea for a less caffeinated option such as a herbal tea or finely chopped mint with orange zest.
