These banana fritters are easy to make requiring a batter made from eggs, shredded coconut, flour, ripe bananas, vanilla and a few other kitchen cupboard staples. The batter is carefully scooped into hot canola oil and fried till golden brown. The donut fritters will have a golden crispy exterior and a fluffy sweet interior. The fritters can be topped with a layer of icing sugar or you can make an accompanying dip such as a caramel sauce.
