Chinova's 'Chiber' Will Make Vegan Beer Easier to Brew

Chinova Bioworks, a food technology company specializing in clean-label alternatives, has announced that it is currently developing 'Chiber' for beer brewing.

The new technology will utilize Chinova's proprietary white button mushroom fiber, eliminating animal products from the beer production process by implementing a vegan-friendly mushroom fining agent. In particular, Chinova intends for its new mushroom-based technology to turn the beer filtration process vegan-friendly. Many breweries still use pepsin (an animal product derived from pigs' stomach enzymes) and isinglass (from fish bladders) to filter beer, giving it a clear and bright appearance.

Ideally, these brewers can switch over to 'Chiber,' which according to the company, works eight times faster at settling yeast post-fermentation than animal-based products. The new processing technology comes as a result of a partnership between Chinova Bioworks and College Communautaire du Nouveau Brunswick’s (CCNB).
