Beware—this is not your average caramel recipe. This creation from the Cupcake Project blog is made with ingredients like fish sauce, kaffir limes and lemongrass, clearly channeling flavors of Thailand. The Fish Sauce Caramels may not have the most appetizing name, but mixed in with dark chocolate, sugar, coconut milk, whipping cream and corn syrup, that fishy taste is probably drowned out entirely.
To make these caramels, what you'll need to do is heat up the coconut milk, heavy whipping cream and lime leaves to a boiling point. From there, this mixture can be removed from the heat to cool. At this point, the sugar and corn syrup can be added, along with the fish sauce. When all has been poured and cooled, the caramels can be dipped in chocolate and sprinkled with dried lemongrass to garnish.
