Kay’s Boutique Café is a Bangkok-based café that is currently hosting a breakfast pop-up in New York City. While the café is well known for its artisanal French toast, it is also making headlines for its color-changing Bluebell Vine Tea. The colorful refresher is a cold tea made with Thai bluebell vine, which is also known as butterfly pea. The blue-hued vine is first boiled in water before it is combined with coconut water, ice, and a splash of lemon juice. The acidic properties in the lemon makes the color of the tea change from blue to purple for an Instagram-friendly drinking experience.
