Bernal Cutlery's Japanese-style chef's knife features a hand-ground blade forged from A2 tool steel, a carbon steel selected for its excellent edge retention and ease of sharpening. Each blade is ground on a water-cooled stone wheel with a gentle convexity and thin geometry behind the edge, then finished on natural Japanese whetstones to achieve a smooth cutting feel and reliable food release.
