There's a brand-new beer duo from SEVEN BRO7HERS BREWING CO for the autumn and one part of this sweet and sour combo couldn't be created without the other. In fact, the Sour Dreams upcycles the sweet and sugary wort from the Sweet Dreams DIPA.
As described by Head brewer Jack Dixon of SEVEN BROTHERS, "The concept is using the same mash for two different beers, instead of sending sweet sugary delicious wort down the drain, we make a whole new beer." After the alcohol and sweet grains are mashed, the grains are rinsed and because the grain bill on the beer is so large and sweet, there's the potential for the grains to be rinsed twice to create two different kinds of beers.
