These mini potatoes give your visitors the opportunity to enjoy a usually high calorie meal guilt-free. To make these little yet satisfying appetizers, you'll need baby potatoes, sour cream, asparagus and bacon. If you have vegetarian guests it's a good idea to make some without meat so they can enjoy these treats as well.
To get started, simply cut all your potatoes in half and place them in the oven at 450 degrees Fahrenheit. While they're cooking, cook your bacon and asparagus in separate pans. When all is ready, scoop a little bit of sour cream on each potato and adorn them with bacon and asparagus for aesthetic appeal.
