Aerobanquets RMX is a virtual and augmented reality dining and art experience presented by The James Beard Foundation and inspired by the Futurist Cookbook. The multi-sensory journey unfolds over the seven courses, promising an "hour-long, mind-altering art and dining experience."

The experience requires diners to don a virtual reality headset and open their minds to new experiences with food that may reshape their perceptions forever. As Italian artist Mattia Casalegno revealed to the Washington Post, "Anytime we go to a restaurant, we have some ideas of how we should eat and what the things we are eating will taste like, whether it's meat, fish or vegetables… In our brains, we are already experiencing the taste. I wanted to use virtual reality to reframe the experience—in our brains, we are blanked out and we can start from scratch in a way."
