ADM partnered with Every to begin commercial production of OvoPro, an animal-free egg protein ingredient made through precision fermentation, at ADM’s Clinton, Iowa, facility. The vegan, cholesterol-free ingredient is designed to replicate key egg functions while delivering a PDCAAS score of 1.0, indicating high protein quality.

OvoPro provides binding, gelling, foaming and whipping functionality across applications including frozen foods, baked goods, pasta and beverages. ADM will use its fermentation capabilities to expand supply as Every increases production, offering food manufacturers another option amid volatility in egg and whey markets.

For food makers, the scale-up provides a more stable source of high-quality protein without sacrificing important formulation performance.
