Glenfiddich and Daphne Restaurant Joined Forces in November

The elevated spirits brand Glenfiddich and the Toronto-based dining establishment Daphne Restaurant joined forces in late November for an exclusive culinary presentation that spanned one evening. Jamie Johnson, the Glenfiddich Canadian National Brand Ambassador, hosted the experience.

The format of this collaborative venture involved a sequence of four dishes, curated by Chef de Cuisine Brian Ho. Each course was specifically created to complement a selected expression from the distiller's premium portfolio — Glenfiddich’s most coveted aged whiskies of 21, 23, 26, and 29 Years Old.

The menu progression began with Tuna Crudo, frozen stone fruit granita, sturgeon caviar, preserved lemon, and compressed pear, which was served with the Glenfiddich 23 Year Old Grand Cru. The second course — the Creole-style Bouillabaisse, mussels, clams, branzino, and andouille lobster broth — paired well with the Glenfiddich 21 Year Old Gran Reserva. The third course was comprised of Duck Breast roasted on the crown, mole jus, coffee, roasted carrots, and the Glenfiddich 29 Year Old Grand Yozakura. For dessert, guests of Daphne Restaurant enjoyed an Apple Tart Tatin with caramelized apples, puff pastry, and vanilla mascarpone ice cream, alongside the Glenfiddich 26 Year Old Grande Couronne.
