To assemble the dish, a thin layer of zucchini is placed over a serving of cashew ricotta, then topped with a layer of pistachio pesto, a layer of tomato slices and a layer of red pepper marinara sauce. For garnish, the whole thing is topped with olive oil, fresh arugula, cashews, oregano and red chili flakes.
