Djokovic's zucchini lasagna recipe is a hearty meal design to fit the athlete's strict vegan diet. The dish consists of three component, which include homemade cashew ricotta, pistachio pesto and red pepper marinara sauce. To assemble the dish, a thin layer of zucchini is placed over a serving of cashew ricotta, then topped with a layer of pistachio pesto, a layer of tomato slices and a layer of red pepper marinara sauce. For garnish, the whole thing is topped with olive oil, fresh arugula, cashews, oregano and red chili flakes. The result is a carb-free, raw vegan lasagna that is packed with the goodness of plant-based ingredients.
