As more consumers opt to purchase plant-based food products in an effort to live a more sustainable and ethical lifestyle, many brands have catered to consumer needs with the launch of vegan products including UK-based grocery chain Waitrose that recently launched the new Vegan No Smoked Slam & Dill sandwich. The new to-go sandwich option features spinach leaves, lemon, dill, vegan mayonnaise, "creamy vegan spread," "smoked and marinated carrot" atop an oatmeal bread.
Waitrose is not the first brand to use a carrot as a substitute for salmon -- other food producers have used the ingredient to create vegan salmon sushi and a vegan BLT sandwich. As veganism becomes more prevalent in consumer purchasing habits, we can expect to see brands launch more plant-powered food options to meet consumer needs.
