The winter season is made for eating and people will love experimenting with this pastime in a variety of ways; one of which might involve some sour salt. Food is one of the best ways to stay warm, yet comfort dishes can often be too heavy and traditional. Sour salt adds an unusual element to such dishes that elevates comfort food to a gourmet status.
Created by Stuart Brioza of State Bird Provisions in San Francisco, the sour salt is made using sauerkraut. Made for dipping, the process is relatively simple to execute, "He takes a pickled or fermented ingredient, dehydrates the hell out of it, then pulverizes it into a fine powder," writes Bon Appetit. Each version of his sour salt concoctions is as surprising as the next.
