L'acajou Bakery and Cafe Serves Its Sandwich for Breakfast on a Scone

As the owner of the L’acajou Bakery and Cafe, Matthew Roder is noticing that many of his customers want to up their protein intake and decrease their consumption of sugar—and he is responding to these needs by serving up a unique savory sandwich for breakfast. This sandwich is filled with tomato, spinach, egg and bacon, served between slices of a cheddar-chiptole scone.

Roder describes that "People want something that they can easily eat either on the way to work or once they get to their desk, and it’s easy and portable and more filling than just a pastry." Although what fills the sandwich is fairly standard, swapping out a plain bun for a savory, spicy scone is a new way to reinvent these classics.
