Chef Dustin Brandt is trying to take the pop up dining experience to the next level. Currently seeking finances via crowdfunding platform Kickstarter, his Underground Fine Dining project involves hosting dinners in a new place with a different menu every night. By basing his ever evolving menus off the venue to best fit the new location, the chef has the opportunity to innovate and improvise.

As described in the Kickstarter page, this pop up dining service involves creative dinners and tasting menus that could be anywhere from 4 to 12 courses. From rented vacation homes to train cars, the culinary entrepreneur envisions a number of different avenues to obtain new and unique restaurant locations. He also hopes to work closely with local farmers.
