Michelin-starred Hexagon restaurant’s Chef Rafael Covarrubias is collaborating with Chef Tony Bish, recognized from Iron Chef and Master Chef, to host a four-day-only sourdough pizza pop-up at Tony’s Sourdough Pizzeria. This exclusive event brings together the precision of Michelin-level dining and the rustic appeal of wood-fired sourdough, offering a rare opportunity to enjoy pizza reimagined through a fine dining perspective.

The menu introduces six limited-edition creations that emphasize inventive ingredients and bold flavor profiles. Featured dishes include 'Esquites,' inspired by Mexican street corn with cotija, chiltepin chili, and nduja sausage, 'Pigstachio,' combining prosciutto chicharron, Sicilian pistachio, mascarpone, and honey and 'Matsutake Mushroom,' pairing taleggio crema, caramelized shallot, brown butter, and tarragon.

Other highlights include 'Braise Be' with braised short rib, fontina, potato chips, crème fraîche, demi-glace, and chives, 'Miso Crabby' with miso rose sauce, mozzarella, crab, beef bacon, dill aioli, and katsuobushi and 'Truffle & Flame' with smoked aubergine, ricotta, tahini, herbs, pomegranate, and truffle chili crunch.
