Tom Byrne Has Created the Umami-Rich 'Miso Hungover' Cocktail

Tom Byrne, head bartender of Rondo at the Houston in London, England, has debuted the Miso Hungover (me-so-hungover), a gin-based twist on the classic breakfast cocktail, the bloody mary. Crafted for the morning after a big night out, the new beverage doubles down umami, delivering a savory and somewhat satiating beverage that is sure to cure a hangover.

The umami-heavy flavor profile of the Miso Hungover is derived from a range of unconventional cocktail ingredients including, white miso paste, gochujang paste, 150 ml of high-quality tomato juice, a stick of celery, and Worcestershire sauce.

To create the cocktail at home, Byrne suggests that you first add the Worcestershire sauce, gochujang, and miso into a blender and pulse three times, or blend until well combined. From there, he recommends that you pour the drink in a highball glass with ice before adding gin and tomato juice.
