Mallol Arquitectos' new Panama-based bakery is rooted in sustainability, prioritizing the use of low-impact materials. The business opts for a compacted earth counter, blending locally sourced materials with traditional craftsmanship. Atop the textured counter, coffee machines and pastry displays take center stage, complementing the natural tones of the space. Along two sides, slim high-top tables are thoughtfully positioned, offering a casual spot for patrons. The walls, coated in a locally made textured clay plaster, feature soft, rounded edges and include a series of small, built-in niches.
On the opposite side, a large communal dining table fosters a sense of connection, encouraging guests to engage with one another, while smaller two-person tables are strategically placed throughout the space, creating a balanced and inviting layout.
"The colour and material palette was carefully selected to reflect the brand’s essence and origins, evoking the softness, warmth, and spontaneity of nature," said the studio.
