Begin making your ice cream bites by combining milk, vanilla extract and unsalted butter. Once all of the wet ingredients are combined, add in the light brown sugar, granulated sugar, salt, flour and miniature chocolate chips. Place the dough in the fridge and then begin smoothing the ice cream out on a baking tray. Place the ice cream-covered tray in the freezer and remove the dough from the fridge. Roll out small sections of cookie dough and place a tiny scoop of ice cream in the middle. To finish, wrap the dough around the ice cream and freeze again for two hours.
While the whole process involves a bit of waiting, the result is a batch of delicious bite-size treats that combine the familiar flavor of chocolate chip cookies, with the refreshing taste of ice cream.
