Chef Akira Back has announced plans to open a new restaurant within the Fairmont Château Laurier at 1 Rideau Street in downtown Ottawa. Scheduled to open in early 2026, the restaurant will introduce the internationally recognized Akira Back concept to Canada’s capital, contributing to the city’s evolving fine dining landscape. The venue will combine contemporary Japanese cuisine, global culinary influences, and refined design within one of Canada’s most historic hotel properties.
The menu will present a curated selection of signature dishes drawn from Chef Back’s global portfolio. Expected offerings include the 'AB Tuna Pizza,' featuring a crisp base with tuna sashimi and ponzu-infused aioli, as well as '48 Hour Short Ribs' prepared from Australian wagyu using a traditional galbi jjim-style marinade. Guests may also experience the 'Nazo 9' tasting format, a chef-driven presentation of nine dishes revealed tableside.
