These breakfast energy balls are perfect for putting a spring in your kids' step before they go to school.
These breakfast energy balls make for an excellent morning snack for kids before they go to school. Seeing as how many schools disallow children from bringing nuts in their snack packs -- due to the presence of children with extreme nut allergies -- this breakfast energy ball is perfect for kids to gobble down before they hop on that school bus.
To create these energy balls, place almonds in a food processor and pulse them until chopped. Add dried fruit, nut butter (peanut, cashew, almond, etc.) and granola and mix together well. Then form a 1-inch ball in your hands. If the mixture doesn't stick together well, add a couple of tablespoons of water and pulse together until sticky.
Then, simply down the energy balls or refrigerate them for later use. Delicious, nutritious and packed with energy, these energy balls will keep your kids going all day long.
