Edinburgh Gin's new distillery has opened in Scotland’s capital, expanding the brand’s production capabilities while "paying homage to the region’s botanical heritage; located at The Arches on the historic Trinity Church site, the facility seamlessly integrates preserved architectural elements, such as exposed brickwork and vaulted ceilings, with contemporary design features, including expansive glass windows, a rooftop terrace, and a bar offering curated tastings."
The distillery houses three copper stills: Annie and Lina, named after pioneering female gardeners at the Royal Botanic Garden Edinburgh, and Matilda, dedicated to crafting experimental gin varieties. Operating exclusively on renewable electricity, the site "upholds carbon-neutral principles, reinforcing the brand’s commitment to sustainability through the use of recycled glass and the elimination of secondary packaging."
Owned by Ian Macleod Distillers, Edinburgh Gin continues to expand its footprint, following the recent debut of a boutique at Edinburgh Airport and earning industry recognition for excellence in gin craftsmanship.
