To celebrate the upcoming festival of lights known as Diwali, this Motichoor Rabdi dessert parfait that can be made at home to celebrate the occasion. The rich parfait features milk, sugar and nuts expertly layered together with spices to create a tantalizing sweet and savory dessert.
The recipe begins with a whole milk base that is boiled with aromatic spices such as cardamom and sugar till thick in consistency. The custard is layered in a glass overtop of Motichoor Ladoo fried desserts made from chickpea flour and sugary syrup that are crumbled in the base. To finish the parfait off, it is topped with slivers of almonds and pistachios before being chilled for several hours. Once set the dessert can be served and enjoyed with a spoon.
