Nicole Austin, General Manager and Distiller at Cascade Hollow Distilling Co., is challenging attitudes toward “Barrel Proof” whiskey with the debut of the ‘Cascade Moon 15-Year-Old Barrel Proof.’
The new Cascade Moon offering is a spirit that entered the barrel at 115 proof and was matured in Cascade Hollow's rickhouses for 15 years. As a result of conditions, proof of the offering decreased to 79.8, which is well below the minimum criteria for classification as whiskey.
‘Cascade Moon 15-Year-Old Barrel Proof’ is a refined and nuanced spirit, offering a fragrant and tropical scent with a leather and wood finish. The spirit is best savored neat or on the rocks. ‘Cascade Moon’ will be available at select retailers for a limited time, priced at $124.99 USD.
