The 'Oh She Glows' blog recently whipped up a festive dessert that is perfect for any Canada Day party. Made from chia seed jam and coconut whipped cream, this dish has just the right amount of red and white.
This patriotic dish is similar to a classic berry fool, but with an added vegan twist. To make the red layer, you will need strawberries, cherries, maple syrup, chia seeds, vanilla extract, lemon juice and grated red beet. To begin, heat the berries and maple syrup into a medium saucepan. Then add the chia seeds, vanilla, lemon and grated beet. The use of strawberries, cherries and grated beet gives this dish a bold red color. For the white layer, you will need to whip full-fat coconut milk with vanilla bean and a little bit of sugar.
Assemble the dish by alternating layers of the jam and whipped cream in small parfait glasses. The end result is a gorgeous flag-inspired dessert that is sure to be a hit at any Canada Day party.
