While this chocolate pudding is made with avocados, it still retains a rich brown coloring thanks to the addition of unsweetened cocoa powder that turns the fruit's flesh into a rich chocolate hue. The pudding is made with two ripe avocados blended with coconut cream, coconut milk, beet sugar, salt, vanilla and cocoa powder. Peppermint extract is added to give the pudding a mint chocolate flavoring.
