Avocado ice pops are gaining popularity this summer due to their creamy taste and health benefits.
Taken from Fany Gerson's 'Authentic Recipes for Mexican Ice Pops, Shaved Ice, & Aguas Frescas' cookbook, this recipe is posted on the Food Republic website with great appreciation. With avocado ice cream being a popular dessert in Mexico, Gerson decided to take the dessert a step further and make it a portable summer snack in the form of an ice pop. Unlike the well-received ice cream, Avocado Ice Pops are completely dairy-free. However, this unusual popsicle still obtains a creamy texture, which is achieved by the ripe avocados mixed with lime juice.
In addition to the creamy texture and taste, these ice pops are high in fiber and loaded with potassium.
