UMYUM was born out of necessity and experimentation with plant-based cheesemaking after co-founders Katherine and Baz Corden discovered their newborn’s dairy intolerance. Now, UMYUM serves up products like Monroe, a white-rind Camembert-style inspired by French classics, but made from the cashew kernel. Other simple, whole food ingredients go into making the inventive, nutrient-dense dairy-free cheese, such as water, salt and cultures—and no added oils, starches, fillers or artificial flavors are to be found here. Flavor-wise, Monroe is described as "charming, subtle and unmistakable with its bloomy rind, earthy, sweet tones and a creamy finish."
