'Seremoni,' the consumer brand of Shinkei Systems, is stocking sockeye salmon processed by a refrigerator-sized robot called 'Poseidon,' which uses computer vision and automation to replicate ike jime. The product is presented as prepped fish cuts for shoppers, with the unique element being the on-boat robot that performs the humane spike to the brain.
Poseidon sits on fishing boats and delivers an instant brain spike that limits stress hormones and reduces lactic acid in the muscle. That handling removes blood from the meat, helps the fillet retain weight, and, by the company’s account, can extend shelf life by up to three times. Seremoni fish are already available at a handful of Whole Foods Market locations in Los Angeles and at select restaurants, including 11 high-end spots in the city.
For consumers, this promises firmer, less acidic, longer-lasting salmon and a cleaner taste. The approach turns an artisanal ike jime practice into a scalable onboard process, and the company has attracted more than $40 million in funding since its founding in 2021.
