HomeState and Atsuko Okatsuka have joined forces for The Atsuko Bowl to blend together Tejano and Japanese ingredients and flavors to achieve something distinctly fresh and new.
The bowl comes as part of the brand's first foray into bowls with a variety of ingredients and a rice base, which is Kokuho Calrose rice sourced from the Central Valley in California. The rice is prepared with lime juice instead of rice vinegar for a Texas-inspired spin, and comes topped with achiote-marinated chicken, slow-cooked black beans, roasted mushrooms and a cabbage slaw with pickled jalapeños. The menu item comes finished with sour cream, tortilla strips, chopped cilantro and a miso chipotle sauce.
The Atsuko Bowl from HomeState will also support a good cause with $1 from every one ordered going to the Immigrant Defenders Law Center (ImmDef) nonprofit deportation defense law firm.
